Glycerides are esters formed from glycerol and fatty acids.

According to Panera, Monoglycerides, Diglycerides & Triglycerides are not clean label.

When Ethoxylated, Mono and Diglycerides are emulsifiers.

Note: Vegetable oils and animal fats (such as butter) contain mostly triglycerides, but are broken down by natural enzymes into mono and diglycerides and free fatty acids and glycerol.
