Nitrates and nitrites are preservatives used in the curing process of meats.

Synthetic nitrates and nitrites are not considered clean label. However, nitrates and nitrites can also occur naturally in certain foods, such as celery.

Note: Nitrates and nitrates cannot simply be removed from cured meat products, they are a necessary and historical. Additionally, the USDA has legal food safety guidelines around their use.
